1 ĐẶT VẤN ĐỀ

2004,có hai loại Bồ Công Anh, Bồ Công Anh Việt Nam có tên khoa học Lactuca indica L., còn gọi là rau Bồ Cóc, Diếp Dại, Lưỡi Cày có mặt ở nhiều nơi nên được nhiều người biết đến.
Bồ Công Anh Trung Quốc có tên khoa học là Taraxacum officinael WIGG hay còn gọi Hoàng Địa Đinh, Nãi Chấp Thảo, chỉ mọc ở những vùng núi cao như Đà Lạt, Sa Pa, Tam Đảo. Ở Các nước Châu Âu như Đức, Pháp trồng cây này làm rau ăn và để làm thuốc. Trong y học cổ truyền, cây Bồ Công Anh Trung Quốc có tác dụng trong điều trị bệnh gan, giải độc, lợi tiểu, nhuận đường, cao huyết áp, hạ sốt, trị mụn nhọt… Thành phần hóa học của Bồ công Anh đã được nhiều tác giả nước ngoài nghiên cứu, tuy nhiên ở Việt Nam hiện nay chưa thấy có tài liệu nào được công bố.

Trong bài báo này, chúng tôi trình bày kết quả bước đầu khảo sát thành phần hóa học từ cao ethyl acetate của cây Bồ Công Anh Trung Quốc mọc hoang tại Đà Lạt.

Từ lâu đời,người Á cũng như Âu đã dùng Bồ công anh Taraxacum làm rau ăn .Rau này ngon và bổ.Trước đây nó là cây mọc hoang hiện nay đã trồng khá nhiều.Cách trồng như rau xà lách , thích hợp với đất không phèn.Rau mọc ở đất phèn có vị đắng.Khi thu hoạch chỉ cắt ngang gốc , rễ còn lại sẽ mọc tiếp.Theo Agriculture report 1994,nó có chất bổ.Trong 100g rau có 8mg carotenoid ( chủ yếu là letein) , 35g vitamin C , 178mg calci, 3mg sắt.Theo Jame Duke , một chuyên gia về cây trồng, đặc biệt Taraxacum có lượng lecithin cao hơn 500 loại cây khác.
Theo trung y , nó có tình thanh nhiệt , mát gan , thông tiểu , nhuận tràng .Phải chăng mát gan nhờ lecithin , thông tiểu vì có hàm lượng kali cao , nhận trường là tính cố hữu của rau xanh do nhiều chất xơ.Taraxacum còn làm giảm cholesterol – huyết do có lecithin.Điều cần nhớ là những người đang điều trị cao huyết áp bằng loại thuốc ức chế men chuyển ACEI ( captopril , enalapril ,…) không nên ăn nhiều Taraxacum cũng như các loại rau có lượng kali cao.Lutein chống thoái hóa điểm vàng trên võng mô , chống mờ mắt.
Vị ngọt của của Bồ công anh Taraxacum do inulin , với hàm lượng khá cao ( 25%) .Người bệnh tiểu đường phải kiêng glucoz nhưng dùng inulin được.Taraxacum rất thuận lợi cho thực đơn người bệnh tiểu đường vì nó có tính thanh nhiệt lại thêm inulin ngọt.Vị đáng do taraxacin và dẫn chất.Còn nhiều tính chất trị liệu chưa được kiểm chứng.

Vì hình dáng giống nhau nên có người nhầm lẫn mà gọi tên là Bồ công anh.Thực ra nó là Rau mũi mác với hoa đầu màu vàng.Cây này đắng chứ không ngọt.Thường dùng làm rau ăn.Nhân dân dùng rau này để trị tắc tia sữa , tiêu hóa kém , mụn nhọt.
Nước lá Lactuca indica uống trị đau dạ dày , có lẽ do tính thanh nhiệt và tăng lớp nhầy bảo vệ thành dạ dày.Hãy uống nước ép rau .Không nên ăn rau vì chất bã làm cho thức ăn lưu lại lâu trong dạ dày , kích thích tăng tiết chất chua.

3-Cnicus japonicus ( Đại kế ).
Đây là một nhầm lẫn đáng tiếc vì rất dễ phân biệt nó với Taraxacum .Cây này chỉ có tác dụng cầm máu.

4-Elephantopus scaber
Thường bị gọi nhầm là Bồ công anh.Nó chính là cây Chỉ thiên.Là và hoa hoàn toàn khác Taraxacum.Hoa màu tím nhạt.
Chỉ thiên có vị đắng , tính lạnh .Nó có tác dụng hạ sốt , giải độc , trị mụn nhọt.Còn dùng để trị xuất huyết và bí tiểu.Chỉ thấy dùng trong trong dân gian , chưa có tài liệu nghiên cứu chính thức.

Taraxacum officinale, the common dandelion (often simply called "dandelion"), is a flowering herbaceous perennial plant of the family Asteraceae (Compositae). It can be found growing in temperate regions of the world, in lawns, on roadsides, on disturbed banks and shores of water ways, and other areas with moist soils. T. officinale is considered a weed, especially in lawns and along roadsides, but it is sometimes used as a medical herb and in food preparation. Common dandelion is well known for its yellow flower heads that turn into round balls of silver tufted fruits that disperse in the wind called "blowballs"[1] or "clocks" (in both British and American English).

Description
Taraxacum officinale grows from generally unbranched taproots and produces one to more than ten stems that are typically 5 to 40 cm tall but sometimes up to 70 cm tall. The stems can be tinted purplish, they are upright or lax, and produce flower heads that are held as tall or taller than the foliage. The foliage is upright growing or horizontally orientated, with leaves having narrowly winged petioles or being unwinged. The stems can be glabrous or are sparsely covered with short hairs. Plants have milky latex and the leaves are all basal, each flowering stem lacks bracts and has one single flower head. The yellow flower heads lack receptacle bracts and all the flowers, which are called florets, are ligulate and bisexual. The fruits are mostly produced by apomixis.[6]
The 5–45 cm long and 1–10 cm wide leaves are oblanceolate, oblong, or obovate in shape with the bases gradually narrowing to the petiole. The leaf margins are typically shallowly lobed to deeply lobed and often lacerate or toothed with sharp or dull teeth.[6]
The calyculi (the cuplike bracts that hold the florets) are composed of 12 to 18 segments: each segment is reflexed and sometimes glaucous. The lanceolate shaped bractlets are in 2 series with the apices acuminate in shape. The 14 to 25 mm wide involucres are green to dark green or brownish green with the tips dark gray or purplish. The florets number 40 to over 100 per head, having corollas that are yellow or orange-yellow in color.
The fruits, which are called cypselae, range in color from olive-green or olive-brown to straw-colored to grayish, they are oblanceoloid in shape and 2 to 3 mm long with slender beaks. The fruits have 4 to 12 ribs that have sharp edges. The silky pappi, which form the parachutes, are white to silver-white in color and around 6 mm wide. Plants typically have 24 or 40 pairs of chromosomes but some plants have 16 or 32 chromosomes.

The taxonomy of the genus Taraxacum is complicated by apomictic and polyploid lineages,[8][9] and the taxonomy and nomenclatural situation of Taraxacum officinale is not yet fully resolved,[7] The taxonomy of this species has in the past been complicated by the recognition of numerous species,[10] subspecies and microspecies. E.g. Rothmaler’s flora of Germany recognizes roughly 70 microspecies.[11] The plants introduced to North America are triploids that reproduce by obligate gametophytic apomixis[7][12] Some authorities recognize three subspecies of Taraxacum officinale including:[13][14]

Ecology
Taraxacum officinale is native to Eurasia,[24] and now is naturalized throughout North America, southern Africa, South America, New Zealand, Australia, and India. It occurs in all 50 states of the USA and most Canadian provinces.[18] It is considered a noxious weed in some jurisdictions,[25] and is considered to be a nuisance in residential and recreational lawns in North America.[26] It is also an important weed in agriculture and causes significant economic damage because of its infestation in many crops worldwide.[25]
The dandelion is a common colonizer of disturbed habitats, both from wind blown seeds and seed germination from the seed bank.[27] The seeds remain viable in the seed bank for many years, with one study showing germination after nine years. This species is a somewhat prolific seed producer, with 54 to 172 seeds produced per head, and a single plant can produce more than 5,000 seeds a year. It is estimated that more than 97,000,000 seeds/hectare could be produced yearly by a dense stand of dandelions.[citation needed] When released, the seeds can be spread by the wind up to several hundred meters from their source. The seeds are also a common contaminant in crop and forage seeds. The plants are adaptable to most soils and the seeds are not dependent on cold temperatures before they will germinate but they need to be within the top 2.5 centimeters of soil.[18]
While not in bloom, this species is sometimes confused with others, such as Chondrilla juncea, that have similar basal rosettes of foliage.[citation needed] Another plant, sometimes referred to as Fall Dandelion, is very similar to dandelion, but produces "yellow fields" later.

While the dandelion is considered a weed by many gardeners and lawn owners, the plant has several culinary and medicinal uses. The specific name officinalis refers to its value as a medicinal herb, and is derived from the word opificina, later officina, meaning a workshop or pharmacy.[28] The flowers are used to make dandelion wine,[29] the greens are used in salads, the roots have been used to make a coffee substitute (when baked and ground into powder) and the plant was used by Native Americans as a food and medicine

Culinary
Dandelions are wildcrafted or grown on a small scale as a leaf vegetable. The leaves (called dandelion greens) can be eaten cooked or raw in various forms, such as in soup or salad. They are probably closest in character to mustard greens. Usually the young leaves and unopened buds are eaten raw in salads, while older leaves are cooked. Raw leaves have a slightly bitter taste. Dandelion salad is often accompanied with hard boiled eggs. The leaves are high in vitamin A, vitamin C and iron, carrying more iron and calcium than spinach.[31]
Dandelion flowers can be used to make dandelion wine, for which there are many recipes.[32] It has also been used in a saison ale called Pissenlit (literally "wet the bed" in French) made by Brasserie Fantôme in Belgium. Dandelion and burdock is a soft drink that has long been popular in the United Kingdom.
Another recipe using the plant is dandelion flower jam. In Silesia and also other parts of Poland and world, dandelion flowers are used to make a honey substitute syrup with added lemon (so-called May-honey). This "honey" is believed to have a medicinal value, in particular against liver problems. Ground roasted dandelion root can be used as a non-caffeinated coffee substitute.

Herbal medicine
Dandelion root is a registered drug in Canada, sold principally as a diuretic.[citation needed] A hepatoprotective effect in mice of chemicals extracted from dandelion root has been reported.[34] Dandelion is used in herbal medicine as a mild laxative, for increasing appetite, and for improving digestion.[35] The milky latex has been used as a mosquito repellent[36] and as a folk remedy to treat warts

Other
Yellow or green dye colours can be obtained from the flowers but little colour can be obtained from the roots of the plant.[38]

Leaves – raw or cooked[1, 2, 4, 5, 7, 9, 12, 14, 33, 154]. When used in salads, they are rather bitter, though less so in the winter. Tender young leaves are considerably less bitter than older leaves[K]. The leaves are often blanched (by excluding light from the growing plant) before use[183]. This will make them less bitter, but they will also contain less vitamins and minerals[K]. A very nutritious food, 100g of the raw leaves contain about 2.7g. protein, 9.2g. carbohydrate, 187mg Calcium, 66mg phosphorus, 3.1mg iron, 76mg sodium, 397mg potassium, 36mg magnesium, 14000iu vitamin A, 0.19mg vitamin B1, 0.26mg vitamin B2, 35mg vitamin C[173]. Root – raw or cooked[5, 9, 12, 183]. Bitter. A turnip-like flavour[159]. Flowers – raw or cooked[102, 159]. A rather bitter flavour[K], the unopened flower buds can be used in fritters[183] and they can also be preserved in vinegar and used like capers[7]. Both the leaves and the roots are used to flavour herbal beers and soft drinks such as ‘Dandelion and Burdock’[238]. The roots of 2 year old plants are harvested in the autumn, dried and roasted to make a very good coffee substitute[2, 4, 5, 12, 54, 159]. It is caffeine-free[213]. A pleasant tea is made from the flowers[12, 102]. They are also used to make wine – all green parts should be removed when making wine to prevent a bitter flavour[238]. The dandelion is a commonly used herbal remedy. It is especially effective and valuable as a diuretic because it contains high levels of potassium salts and therefore can replace the potassium that is lost from the body when diuretics are used[238]. All parts of the plant, but especially the root, are slightly aperient, cholagogue, depurative, strongly diuretic, hepatic, laxative, stomachic and tonic[4, 7, 9, 21, 54, 165, 176, 222, 238]. The root is also experimentally cholagogue, hypoglycaemic and a weak antibiotic against yeast infections[222]. The dried root has a weaker action[222]. The roots can be used fresh or dried and should be harvested in the autumn when 2 years old[4]. The leaves are harvested in the spring when the plant is in flower and can be dried for later use[9]. A tea can be made from the leaves or, more commonly, from the roots[213]. The plant is used internally in the treatment of gall bladder and urinary disorders, gallstones, jaundice, cirrhosis, dyspepsia with constipation, oedema associated with high blood pressure and heart weakness, chronic joint and skin complaints, gout, eczema and acne[238]. The plant has an antibacterial action, inhibiting the growth of Staphylococcus aureus, Pneumococci, Meningococci, Bacillus dysenteriae, B. typhi, C. diphtheriae, Proteus etc[176]. The latex contained in the plant sap can be used to remove corns, warts and verrucae[7]. The latex has a specific action on inflammations of the gall bladder and is also believed to remove stones in the liver[7]. A tea made from the leaves is laxative[222]. The German Commission E Monographs, a therapeutic guide to herbal medicine, approve Taraxacum officinale for dyspepsia, urnary tract infections, liver and gallbladder complaints, appetite loss (see [302] for critics of commission E).

The flowers are an ingredient of ‘QR’ herbal compost activator[32]. This is a dried and powdered mixture of several herbs that can be added to a compost heap in order to speed up bacterial activity and thus shorten the time needed to make the compost[K]. A liquid plant feed can be made from the root and leaves[54]. A low quality latex, which can be used for making rubber, can be obtained from the roots of this plant. A magenta-brown dye is obtained from the root[141]. The plant releases ethylene gas, this stunts the growth of nearby plants and causes premature ripening of fruits[14, 18]. A distilled water made from the ligules (thin appendages at the base of the leaf blades) is used cosmetically to clear the skin and is particularly effective in fading freckles[7].

Cultivation details
A very easily grown plant, it succeeds in most soils[1], though it prefers a well-drained humus-rich neutral to alkaline soil in full sun or light shade[37, 238]. A very hardy plant, tolerating temperatures down to at least -29°c[238]. The dandelion is a common weed of lawns and grassy places. Though it has a bitter flavour, the plant is often cultivated as a salad crop and as a medicinal plant, especially in parts of Europe. There are some named varieties with larger, more tender and less bitter leaves[183]. Dandelions can provide edible leaves all year round, especially if they are given a small amount of protection in the winter[K]. A valuable bee plant and an important food plant for the caterpillars of many butterfly and moth species[4, 24, 30, 54], it grows well in a spring meadow[24]. A deep rooting plant, it has roots up to 1 metre long and brings up nutrients from lower levels of the soil[201]. An excellent plant to grow in lawns, if the lawn is cut no more than fortnightly then the dandelions will provide a good quantity of edible leaves[K]. Grows well with alfalfa[18, 201]. Another report says that it inhibits the growth of nearby plants[54]. This is probably a reference to the fact that the plant gives off ethylene gas, this gas is a hormone that promotes the premature ripening of fruits and also induces the premature fruiting of plants, thereby stunting their growth[14, 18]. T. officinale is not a valid name for this species, but no valid name has as yet been ascribed to it[200]. This is actually an aggregate species of many hundreds of slightly differing species. Most seed production is apomictic which means that plants produce seed non-sexually and all seedlings are clones of the parent, thus small differences are maintained.

Propagation
Seed – sow spring in a cold frame and either surface-sow or only just cover the seed. Make sure the compost does not dry out. Germination should take place within 2 weeks, though 2 weeks cold stratification may improve germination. Prick out the seedlings into individual pots when they are large enough to handle, choosing relatively deep pots to accommodate the tap root. Plant them out in early summer. Division in early spring as the plant comes into growth.

1 ĐẶT VẤN ĐỀ

2004,có hai loại Bồ Công Anh, Bồ Công Anh Việt Nam có tên khoa học Lactuca indica L., còn gọi là rau Bồ Cóc, Diếp Dại, Lưỡi Cày có mặt ở nhiều nơi nên được nhiều người biết đến.
Bồ Công Anh Trung Quốc có tên khoa học là Taraxacum officinael WIGG hay còn gọi Hoàng Địa Đinh, Nãi Chấp Thảo, chỉ mọc ở những vùng núi cao như Đà Lạt, Sa Pa, Tam Đảo. Ở Các nước Châu Âu như Đức, Pháp trồng cây này làm rau ăn và để làm thuốc. Trong y học cổ truyền, cây Bồ Công Anh Trung Quốc có tác dụng trong điều trị bệnh gan, giải độc, lợi tiểu, nhuận đường, cao huyết áp, hạ sốt, trị mụn nhọt… Thành phần hóa học của Bồ công Anh đã được nhiều tác giả nước ngoài nghiên cứu, tuy nhiên ở Việt Nam hiện nay chưa thấy có tài liệu nào được công bố.

Trong bài báo này, chúng tôi trình bày kết quả bước đầu khảo sát thành phần hóa học từ cao ethyl acetate của cây Bồ Công Anh Trung Quốc mọc hoang tại Đà Lạt.

Theo trung y , nó có tình thanh nhiệt , mát gan , thông tiểu , nhuận tràng .Phải chăng mát gan nhờ lecithin , thông tiểu vì có hàm lượng kali cao , nhận trường là tính cố hữu của rau xanh do nhiều chất xơ.Taraxacum còn làm giảm cholesterol – huyết do có lecithin.Điều cần nhớ là những người đang điều trị cao huyết áp bằng loại thuốc ức chế men chuyển ACEI ( captopril , enalapril ,…) không nên ăn nhiều Taraxacum cũng như các loại rau có lượng kali cao.Lutein chống thoái hóa điểm vàng trên võng mô , chống mờ mắt.
Vị ngọt của của Bồ công anh Taraxacum do inulin , với hàm lượng khá cao ( 25%) .Người bệnh tiểu đường phải kiêng glucoz nhưng dùng inulin được.Taraxacum rất thuận lợi cho thực đơn người bệnh tiểu đường vì nó có tính thanh nhiệt lại thêm inulin ngọt.Vị đáng do taraxacin và dẫn chất.Còn nhiều tính chất trị liệu chưa được kiểm chứng.

Vì hình dáng giống nhau nên có người nhầm lẫn mà gọi tên là Bồ công anh.Thực ra nó là Rau mũi mác với hoa đầu màu vàng.Cây này đắng chứ không ngọt.Thường dùng làm rau ăn.Nhân dân dùng rau này để trị tắc tia sữa , tiêu hóa kém , mụn nhọt.
Nước lá Lactuca indica uống trị đau dạ dày , có lẽ do tính thanh nhiệt và tăng lớp nhầy bảo vệ thành dạ dày.Hãy uống nước ép rau .Không nên ăn rau vì chất bã làm cho thức ăn lưu lại lâu trong dạ dày , kích thích tăng tiết chất chua.

3-Cnicus japonicus ( Đại kế ).
Đây là một nhầm lẫn đáng tiếc vì rất dễ phân biệt nó với Taraxacum .Cây này chỉ có tác dụng cầm máu.

4-Elephantopus scaber
Thường bị gọi nhầm là Bồ công anh.Nó chính là cây Chỉ thiên.Là và hoa hoàn toàn khác Taraxacum.Hoa màu tím nhạt.
Chỉ thiên có vị đắng , tính lạnh .Nó có tác dụng hạ sốt , giải độc , trị mụn nhọt.Còn dùng để trị xuất huyết và bí tiểu.Chỉ thấy dùng trong trong dân gian , chưa có tài liệu nghiên cứu chính thức.

Taraxacum officinale, the common dandelion (often simply called "dandelion"), is a flowering herbaceous perennial plant of the family Asteraceae (Compositae). It can be found growing in temperate regions of the world, in lawns, on roadsides, on disturbed banks and shores of water ways, and other areas with moist soils. T. officinale is considered a weed, especially in lawns and along roadsides, but it is sometimes used as a medical herb and in food preparation. Common dandelion is well known for its yellow flower heads that turn into round balls of silver tufted fruits that disperse in the wind called "blowballs"[1] or "clocks" (in both British and American English).

Description
Taraxacum officinale grows from generally unbranched taproots and produces one to more than ten stems that are typically 5 to 40 cm tall but sometimes up to 70 cm tall. The stems can be tinted purplish, they are upright or lax, and produce flower heads that are held as tall or taller than the foliage. The foliage is upright growing or horizontally orientated, with leaves having narrowly winged petioles or being unwinged. The stems can be glabrous or are sparsely covered with short hairs. Plants have milky latex and the leaves are all basal, each flowering stem lacks bracts and has one single flower head. The yellow flower heads lack receptacle bracts and all the flowers, which are called florets, are ligulate and bisexual. The fruits are mostly produced by apomixis.[6]
The 5–45 cm long and 1–10 cm wide leaves are oblanceolate, oblong, or obovate in shape with the bases gradually narrowing to the petiole. The leaf margins are typically shallowly lobed to deeply lobed and often lacerate or toothed with sharp or dull teeth.[6]
The calyculi (the cuplike bracts that hold the florets) are composed of 12 to 18 segments: each segment is reflexed and sometimes glaucous. The lanceolate shaped bractlets are in 2 series with the apices acuminate in shape. The 14 to 25 mm wide involucres are green to dark green or brownish green with the tips dark gray or purplish. The florets number 40 to over 100 per head, having corollas that are yellow or orange-yellow in color.
The fruits, which are called cypselae, range in color from olive-green or olive-brown to straw-colored to grayish, they are oblanceoloid in shape and 2 to 3 mm long with slender beaks. The fruits have 4 to 12 ribs that have sharp edges. The silky pappi, which form the parachutes, are white to silver-white in color and around 6 mm wide. Plants typically have 24 or 40 pairs of chromosomes but some plants have 16 or 32 chromosomes.

The taxonomy of the genus Taraxacum is complicated by apomictic and polyploid lineages,[8][9] and the taxonomy and nomenclatural situation of Taraxacum officinale is not yet fully resolved,[7] The taxonomy of this species has in the past been complicated by the recognition of numerous species,[10] subspecies and microspecies. E.g. Rothmaler’s flora of Germany recognizes roughly 70 microspecies.[11] The plants introduced to North America are triploids that reproduce by obligate gametophytic apomixis[7][12] Some authorities recognize three subspecies of Taraxacum officinale including:[13][14]
Taraxacum officinale ssp. ceratophorum (Ledeb.) Schinz ex Thellung which is commonly called common dandelion, fleshy dandelion, horned dandelion or rough dandelion. It is native to Canada and the western US.[15] Some sources list it as a species, Taraxacum ceratophorum.[16][17]

Ecology
Taraxacum officinale is native to Eurasia,[24] and now is naturalized throughout North America, southern Africa, South America, New Zealand, Australia, and India. It occurs in all 50 states of the USA and most Canadian provinces.[18] It is considered a noxious weed in some jurisdictions,[25] and is considered to be a nuisance in residential and recreational lawns in North America.[26] It is also an important weed in agriculture and causes significant economic damage because of its infestation in many crops worldwide.[25]
The dandelion is a common colonizer of disturbed habitats, both from wind blown seeds and seed germination from the seed bank.[27] The seeds remain viable in the seed bank for many years, with one study showing germination after nine years. This species is a somewhat prolific seed producer, with 54 to 172 seeds produced per head, and a single plant can produce more than 5,000 seeds a year. It is estimated that more than 97,000,000 seeds/hectare could be produced yearly by a dense stand of dandelions.[citation needed] When released, the seeds can be spread by the wind up to several hundred meters from their source. The seeds are also a common contaminant in crop and forage seeds. The plants are adaptable to most soils and the seeds are not dependent on cold temperatures before they will germinate but they need to be within the top 2.5 centimeters of soil.[18]
While not in bloom, this species is sometimes confused with others, such as Chondrilla juncea, that have similar basal rosettes of foliage.[citation needed] Another plant, sometimes referred to as Fall Dandelion, is very similar to dandelion, but produces "yellow fields" later.

While the dandelion is considered a weed by many gardeners and lawn owners, the plant has several culinary and medicinal uses. The specific name officinalis refers to its value as a medicinal herb, and is derived from the word opificina, later officina, meaning a workshop or pharmacy.[28] The flowers are used to make dandelion wine,[29] the greens are used in salads, the roots have been used to make a coffee substitute (when baked and ground into powder) and the plant was used by Native Americans as a food and medicine

Culinary
Dandelions are wildcrafted or grown on a small scale as a leaf vegetable. The leaves (called dandelion greens) can be eaten cooked or raw in various forms, such as in soup or salad. They are probably closest in character to mustard greens. Usually the young leaves and unopened buds are eaten raw in salads, while older leaves are cooked. Raw leaves have a slightly bitter taste. Dandelion salad is often accompanied with hard boiled eggs. The leaves are high in vitamin A, vitamin C and iron, carrying more iron and calcium than spinach.[31]
Dandelion flowers can be used to make dandelion wine, for which there are many recipes.[32] It has also been used in a saison ale called Pissenlit (literally "wet the bed" in French) made by Brasserie Fantôme in Belgium. Dandelion and burdock is a soft drink that has long been popular in the United Kingdom.
Another recipe using the plant is dandelion flower jam. In Silesia and also other parts of Poland and world, dandelion flowers are used to make a honey substitute syrup with added lemon (so-called May-honey). This "honey" is believed to have a medicinal value, in particular against liver problems. Ground roasted dandelion root can be used as a non-caffeinated coffee substitute.

Herbal medicine
Dandelion root is a registered drug in Canada, sold principally as a diuretic.[citation needed] A hepatoprotective effect in mice of chemicals extracted from dandelion root has been reported.[34] Dandelion is used in herbal medicine as a mild laxative, for increasing appetite, and for improving digestion.[35] The milky latex has been used as a mosquito repellent[36] and as a folk remedy to treat warts

Other
Yellow or green dye colours can be obtained from the flowers but little colour can be obtained from the roots of the plant.[38]

Leaves – raw or cooked[1, 2, 4, 5, 7, 9, 12, 14, 33, 154]. When used in salads, they are rather bitter, though less so in the winter. Tender young leaves are considerably less bitter than older leaves[K]. The leaves are often blanched (by excluding light from the growing plant) before use[183]. This will make them less bitter, but they will also contain less vitamins and minerals[K]. A very nutritious food, 100g of the raw leaves contain about 2.7g. protein, 9.2g. carbohydrate, 187mg Calcium, 66mg phosphorus, 3.1mg iron, 76mg sodium, 397mg potassium, 36mg magnesium, 14000iu vitamin A, 0.19mg vitamin B1, 0.26mg vitamin B2, 35mg vitamin C[173]. Root – raw or cooked[5, 9, 12, 183]. Bitter. A turnip-like flavour[159]. Flowers – raw or cooked[102, 159]. A rather bitter flavour[K], the unopened flower buds can be used in fritters[183] and they can also be preserved in vinegar and used like capers[7]. Both the leaves and the roots are used to flavour herbal beers and soft drinks such as ‘Dandelion and Burdock’[238]. The roots of 2 year old plants are harvested in the autumn, dried and roasted to make a very good coffee substitute[2, 4, 5, 12, 54, 159]. It is caffeine-free[213]. A pleasant tea is made from the flowers[12, 102]. They are also used to make wine – all green parts should be removed when making wine to prevent a bitter flavour[238]. The leaves and the roots can also be used to make tea.

The dandelion is a commonly used herbal remedy. It is especially effective and valuable as a diuretic because it contains high levels of potassium salts and therefore can replace the potassium that is lost from the body when diuretics are used[238]. All parts of the plant, but especially the root, are slightly aperient, cholagogue, depurative, strongly diuretic, hepatic, laxative, stomachic and tonic[4, 7, 9, 21, 54, 165, 176, 222, 238]. The root is also experimentally cholagogue, hypoglycaemic and a weak antibiotic against yeast infections[222]. The dried root has a weaker action[222]. The roots can be used fresh or dried and should be harvested in the autumn when 2 years old[4]. The leaves are harvested in the spring when the plant is in flower and can be dried for later use[9]. A tea can be made from the leaves or, more commonly, from the roots[213]. The plant is used internally in the treatment of gall bladder and urinary disorders, gallstones, jaundice, cirrhosis, dyspepsia with constipation, oedema associated with high blood pressure and heart weakness, chronic joint and skin complaints, gout, eczema and acne[238]. The plant has an antibacterial action, inhibiting the growth of Staphylococcus aureus, Pneumococci, Meningococci, Bacillus dysenteriae, B. typhi, C. diphtheriae, Proteus etc[176]. The latex contained in the plant sap can be used to remove corns, warts and verrucae[7]. The latex has a specific action on inflammations of the gall bladder and is also believed to remove stones in the liver[7]. A tea made from the leaves is laxative[222]. The German Commission E Monographs, a therapeutic guide to herbal medicine, approve Taraxacum officinale for dyspepsia, urnary tract infections, liver and gallbladder complaints, appetite loss (see [302] for critics of commission E).

The flowers are an ingredient of ‘QR’ herbal compost activator[32]. This is a dried and powdered mixture of several herbs that can be added to a compost heap in order to speed up bacterial activity and thus shorten the time needed to make the compost[K]. A liquid plant feed can be made from the root and leaves[54]. A low quality latex, which can be used for making rubber, can be obtained from the roots of this plant. A magenta-brown dye is obtained from the root[141]. The plant releases ethylene gas, this stunts the growth of nearby plants and causes premature ripening of fruits[14, 18]. A distilled water made from the ligules (thin appendages at the base of the leaf blades) is used cosmetically to clear the skin and is particularly effective in fading freckles[7].

Cultivation details
A very easily grown plant, it succeeds in most soils[1], though it prefers a well-drained humus-rich neutral to alkaline soil in full sun or light shade[37, 238]. A very hardy plant, tolerating temperatures down to at least -29°c[238]. The dandelion is a common weed of lawns and grassy places. Though it has a bitter flavour, the plant is often cultivated as a salad crop and as a medicinal plant, especially in parts of Europe. There are some named varieties with larger, more tender and less bitter leaves[183]. Dandelions can provide edible leaves all year round, especially if they are given a small amount of protection in the winter[K]. A valuable bee plant and an important food plant for the caterpillars of many butterfly and moth species[4, 24, 30, 54], it grows well in a spring meadow[24]. A deep rooting plant, it has roots up to 1 metre long and brings up nutrients from lower levels of the soil[201]. An excellent plant to grow in lawns, if the lawn is cut no more than fortnightly then the dandelions will provide a good quantity of edible leaves[K]. Grows well with alfalfa[18, 201]. Another report says that it inhibits the growth of nearby plants[54]. This is probably a reference to the fact that the plant gives off ethylene gas, this gas is a hormone that promotes the premature ripening of fruits and also induces the premature fruiting of plants, thereby stunting their growth[14, 18]. T. officinale is not a valid name for this species, but no valid name has as yet been ascribed to it[200]. This is actually an aggregate species of many hundreds of slightly differing species. Most seed production is apomictic which means that plants produce seed non-sexually and all seedlings are clones of the parent, thus small differences are maintained.

Propagation
Seed – sow spring in a cold frame and either surface-sow or only just cover the seed. Make sure the compost does not dry out. Germination should take place within 2 weeks, though 2 weeks cold stratification may improve germination. Prick out the seedlings into individual pots when they are large enough to handle, choosing relatively deep pots to accommodate the tap root. Plant them out in early summer. Division in early spring as the plant comes into growth.

1 ĐẶT VẤN ĐỀ

2004,có hai loại Bồ Công Anh, Bồ Công Anh Việt Nam có tên khoa học Lactuca indica L., còn gọi là rau Bồ Cóc, Diếp Dại, Lưỡi Cày có mặt ở nhiều nơi nên được nhiều người biết đến.
Bồ Công Anh Trung Quốc có tên khoa học là Taraxacum officinael WIGG hay còn gọi Hoàng Địa Đinh, Nãi Chấp Thảo, chỉ mọc ở những vùng núi cao như Đà Lạt, Sa Pa, Tam Đảo. Ở Các nước Châu Âu như Đức, Pháp trồng cây này làm rau ăn và để làm thuốc. Trong y học cổ truyền, cây Bồ Công Anh Trung Quốc có tác dụng trong điều trị bệnh gan, giải độc, lợi tiểu, nhuận đường, cao huyết áp, hạ sốt, trị mụn nhọt… Thành phần hóa học của Bồ công Anh đã được nhiều tác giả nước ngoài nghiên cứu, tuy nhiên ở Việt Nam hiện nay chưa thấy có tài liệu nào được công bố.

Trong bài báo này, chúng tôi trình bày kết quả bước đầu khảo sát thành phần hóa học từ cao ethyl acetate của cây Bồ Công Anh Trung Quốc mọc hoang tại Đà Lạt.

Bồ Công Anh: Hỗ trợ điều trị ung thư dạ dày

Theo trung y , nó có tình thanh nhiệt , mát gan , thông tiểu , nhuận tràng .Phải chăng mát gan nhờ lecithin , thông tiểu vì có hàm lượng kali cao , nhận trường là tính cố hữu của rau xanh do nhiều chất xơ.Taraxacum còn làm giảm cholesterol – huyết do có lecithin.Điều cần nhớ là những người đang điều trị cao huyết áp bằng loại thuốc ức chế men chuyển ACEI ( captopril , enalapril ,…) không nên ăn nhiều Taraxacum cũng như các loại rau có lượng kali cao.Lutein chống thoái hóa điểm vàng trên võng mô , chống mờ mắt.
Vị ngọt của của Bồ công anh Taraxacum do inulin , với hàm lượng khá cao ( 25%) .Người bệnh tiểu đường phải kiêng glucoz nhưng dùng inulin được.Taraxacum rất thuận lợi cho thực đơn người bệnh tiểu đường vì nó có tính thanh nhiệt lại thêm inulin ngọt.Vị đáng do taraxacin và dẫn chất.Còn nhiều tính chất trị liệu chưa được kiểm chứng.

2-Lactuca indica
Vì hình dáng giống nhau nên có người nhầm lẫn mà gọi tên là Bồ công anh.Thực ra nó là Rau mũi mác với hoa đầu màu vàng.Cây này đắng chứ không ngọt.Thường dùng làm rau ăn.Nhân dân dùng rau này để trị tắc tia sữa , tiêu hóa kém , mụn nhọt.
Nước lá Lactuca indica uống trị đau dạ dày , có lẽ do tính thanh nhiệt và tăng lớp nhầy bảo vệ thành dạ dày.Hãy uống nước ép rau .Không nên ăn rau vì chất bã làm cho thức ăn lưu lại lâu trong dạ dày , kích thích tăng tiết chất chua.

3-Cnicus japonicus ( Đại kế ).
Đây là một nhầm lẫn đáng tiếc vì rất dễ phân biệt nó với Taraxacum .Cây này chỉ có tác dụng cầm máu.

4-Elephantopus scaber
Thường bị gọi nhầm là Bồ công anh.Nó chính là cây Chỉ thiên.Là và hoa hoàn toàn khác Taraxacum.Hoa màu tím nhạt.
Chỉ thiên có vị đắng , tính lạnh .Nó có tác dụng hạ sốt , giải độc , trị mụn nhọt.Còn dùng để trị xuất huyết và bí tiểu.Chỉ thấy dùng trong trong dân gian , chưa có tài liệu nghiên cứu chính thức.

Taraxacum officinale, the common dandelion (often simply called "dandelion"), is a flowering herbaceous perennial plant of the family Asteraceae (Compositae). Description
Taraxacum officinale grows from generally unbranched taproots and produces one to more than ten stems that are typically 5 to 40 cm tall but sometimes up to 70 cm tall. The stems can be tinted purplish, they are upright or lax, and produce flower heads that are held as tall or taller than the foliage. The foliage is upright growing or horizontally orientated, with leaves having narrowly winged petioles or being unwinged. The stems can be glabrous or are sparsely covered with short hairs. Plants have milky latex and the leaves are all basal, each flowering stem lacks bracts and has one single flower head. The yellow flower heads lack receptacle bracts and all the flowers, which are called florets, are ligulate and bisexual. The fruits are mostly produced by apomixis.[6]
The 5–45 cm long and 1–10 cm wide leaves are oblanceolate, oblong, or obovate in shape with the bases gradually narrowing to the petiole. The leaf margins are typically shallowly lobed to deeply lobed and often lacerate or toothed with sharp or dull teeth.[6]
The calyculi (the cuplike bracts that hold the florets) are composed of 12 to 18 segments: each segment is reflexed and sometimes glaucous. The lanceolate shaped bractlets are in 2 series with the apices acuminate in shape. The 14 to 25 mm wide involucres are green to dark green or brownish green with the tips dark gray or purplish. The florets number 40 to over 100 per head, having corollas that are yellow or orange-yellow in color.
The fruits, which are called cypselae, range in color from olive-green or olive-brown to straw-colored to grayish, they are oblanceoloid in shape and 2 to 3 mm long with slender beaks. The fruits have 4 to 12 ribs that have sharp edges. The silky pappi, which form the parachutes, are white to silver-white in color and around 6 mm wide. Plants typically have 24 or 40 pairs of chromosomes but some plants have 16 or 32 chromosomes.

The taxonomy of the genus Taraxacum is complicated by apomictic and polyploid lineages,[8][9] and the taxonomy and nomenclatural situation of Taraxacum officinale is not yet fully resolved,[7] The taxonomy of this species has in the past been complicated by the recognition of numerous species,[10] subspecies and microspecies. E.g. Rothmaler’s flora of Germany recognizes roughly 70 microspecies.[11] The plants introduced to North America are triploids that reproduce by obligate gametophytic apomixis[7][12] Some authorities recognize three subspecies of Taraxacum officinale including:[13][14]
Taraxacum officinale ssp. ceratophorum (Ledeb.) Schinz ex Thellung which is commonly called common dandelion, fleshy dandelion, horned dandelion or rough dandelion. It is native to Canada and the western US.[15] Some sources list it as a species, Taraxacum ceratophorum.[16][17]

Taraxacum officinale ssp. vulgare (Lam.) Schinz & R. Keller, which is commonly called common dandelion.
Two of them have been introduced and established in Alaska and the third (ssp. ceratophorum ) is native there.[18]
Taraxacum officinale has many English common names (of which some are no longer in use), including blowball, lion’s-tooth, cankerwort, milk-witch, yellow-gowan, Irish daisy, monks-head, priest’s-crown and puff-ball;[19] other common names include, faceclock, pee-a-bed, wet-a-bed,[20] swine’s snout, [21] white endive, and wild endive.[22]
Carl Linnaeus named the species Leontodon Taraxacum in 1753. The genus name Taraxacum, might be from the Arabic word "Tharakhchakon",[6] or from the Greek word "Tarraxos".[23] The common name "dandelion," comes from the French phrase "dent de lion" which means "lion’s tooth", in reference to the jagged shaped foliage

Ecology
Taraxacum officinale is native to Eurasia,[24] and now is naturalized throughout North America, southern Africa, South America, New Zealand, Australia, and India. It occurs in all 50 states of the USA and most Canadian provinces.[18] It is considered a noxious weed in some jurisdictions,[25] and is considered to be a nuisance in residential and recreational lawns in North America.[26] It is also an important weed in agriculture and causes significant economic damage because of its infestation in many crops worldwide.[25]
The dandelion is a common colonizer of disturbed habitats, both from wind blown seeds and seed germination from the seed bank.[27] The seeds remain viable in the seed bank for many years, with one study showing germination after nine years. This species is a somewhat prolific seed producer, with 54 to 172 seeds produced per head, and a single plant can produce more than 5,000 seeds a year. It is estimated that more than 97,000,000 seeds/hectare could be produced yearly by a dense stand of dandelions.[citation needed] When released, the seeds can be spread by the wind up to several hundred meters from their source. The seeds are also a common contaminant in crop and forage seeds. The plants are adaptable to most soils and the seeds are not dependent on cold temperatures before they will germinate but they need to be within the top 2.5 centimeters of soil.[18]
While not in bloom, this species is sometimes confused with others, such as Chondrilla juncea, that have similar basal rosettes of foliage.[citation needed] Another plant, sometimes referred to as Fall Dandelion, is very similar to dandelion, but produces "yellow fields" later.

While the dandelion is considered a weed by many gardeners and lawn owners, the plant has several culinary and medicinal uses. The specific name officinalis refers to its value as a medicinal herb, and is derived from the word opificina, later officina, meaning a workshop or pharmacy.[28] The flowers are used to make dandelion wine,[29] the greens are used in salads, the roots have been used to make a coffee substitute (when baked and ground into powder) and the plant was used by Native Americans as a food and medicine

Culinary
Dandelions are wildcrafted or grown on a small scale as a leaf vegetable. The leaves (called dandelion greens) can be eaten cooked or raw in various forms, such as in soup or salad. They are probably closest in character to mustard greens. Usually the young leaves and unopened buds are eaten raw in salads, while older leaves are cooked. Raw leaves have a slightly bitter taste. Dandelion salad is often accompanied with hard boiled eggs. The leaves are high in vitamin A, vitamin C and iron, carrying more iron and calcium than spinach.[31]
Dandelion flowers can be used to make dandelion wine, for which there are many recipes.[32] It has also been used in a saison ale called Pissenlit (literally "wet the bed" in French) made by Brasserie Fantôme in Belgium. Dandelion and burdock is a soft drink that has long been popular in the United Kingdom.
Another recipe using the plant is dandelion flower jam. In Silesia and also other parts of Poland and world, dandelion flowers are used to make a honey substitute syrup with added lemon (so-called May-honey). This "honey" is believed to have a medicinal value, in particular against liver problems. Ground roasted dandelion root can be used as a non-caffeinated coffee substitute.

Herbal medicine
Dandelion root is a registered drug in Canada, sold principally as a diuretic.[citation needed] A hepatoprotective effect in mice of chemicals extracted from dandelion root has been reported.[34] Dandelion is used in herbal medicine as a mild laxative, for increasing appetite, and for improving digestion.[35] The milky latex has been used as a mosquito repellent[36] and as a folk remedy to treat warts

Yellow or green dye colours can be obtained from the flowers but little colour can be obtained from the roots of the plant.[38]

Leaves – raw or cooked[1, 2, 4, 5, 7, 9, 12, 14, 33, 154]. When used in salads, they are rather bitter, though less so in the winter. Tender young leaves are considerably less bitter than older leaves[K]. The leaves are often blanched (by excluding light from the growing plant) before use[183]. This will make them less bitter, but they will also contain less vitamins and minerals[K]. A very nutritious food, 100g of the raw leaves contain about 2.7g. protein, 9.2g. carbohydrate, 187mg Calcium, 66mg phosphorus, 3.1mg iron, 76mg sodium, 397mg potassium, 36mg magnesium, 14000iu vitamin A, 0.19mg vitamin B1, 0.26mg vitamin B2, 35mg vitamin C[173]. Root – raw or cooked[5, 9, 12, 183]. Bitter. A turnip-like flavour[159]. Flowers – raw or cooked[102, 159]. A rather bitter flavour[K], the unopened flower buds can be used in fritters[183] and they can also be preserved in vinegar and used like capers[7]. Both the leaves and the roots are used to flavour herbal beers and soft drinks such as ‘Dandelion and Burdock’[238]. The roots of 2 year old plants are harvested in the autumn, dried and roasted to make a very good coffee substitute[2, 4, 5, 12, 54, 159]. It is caffeine-free[213]. A pleasant tea is made from the flowers[12, 102]. They are also used to make wine – all green parts should be removed when making wine to prevent a bitter flavour[238]. The leaves and the roots can also be used to make tea.

The dandelion is a commonly used herbal remedy. It is especially effective and valuable as a diuretic because it contains high levels of potassium salts and therefore can replace the potassium that is lost from the body when diuretics are used[238]. All parts of the plant, but especially the root, are slightly aperient, cholagogue, depurative, strongly diuretic, hepatic, laxative, stomachic and tonic[4, 7, 9, 21, 54, 165, 176, 222, 238]. The root is also experimentally cholagogue, hypoglycaemic and a weak antibiotic against yeast infections[222]. The dried root has a weaker action[222]. The roots can be used fresh or dried and should be harvested in the autumn when 2 years old[4]. The leaves are harvested in the spring when the plant is in flower and can be dried for later use[9]. A tea can be made from the leaves or, more commonly, from the roots[213]. The plant is used internally in the treatment of gall bladder and urinary disorders, gallstones, jaundice, cirrhosis, dyspepsia with constipation, oedema associated with high blood pressure and heart weakness, chronic joint and skin complaints, gout, eczema and acne[238]. The plant has an antibacterial action, inhibiting the growth of Staphylococcus aureus, Pneumococci, Meningococci, Bacillus dysenteriae, B. typhi, C. diphtheriae, Proteus etc[176]. The latex contained in the plant sap can be used to remove corns, warts and verrucae[7]. The latex has a specific action on inflammations of the gall bladder and is also believed to remove stones in the liver[7]. A tea made from the leaves is laxative[222]. The German Commission E Monographs, a therapeutic guide to herbal medicine, approve Taraxacum officinale for dyspepsia, urnary tract infections, liver and gallbladder complaints, appetite loss (see [302] for critics of commission E).

The flowers are an ingredient of ‘QR’ herbal compost activator[32]. This is a dried and powdered mixture of several herbs that can be added to a compost heap in order to speed up bacterial activity and thus shorten the time needed to make the compost[K]. A liquid plant feed can be made from the root and leaves[54]. A low quality latex, which can be used for making rubber, can be obtained from the roots of this plant. A magenta-brown dye is obtained from the root[141]. The plant releases ethylene gas, this stunts the growth of nearby plants and causes premature ripening of fruits[14, 18]. A distilled water made from the ligules (thin appendages at the base of the leaf blades) is used cosmetically to clear the skin and is particularly effective in fading freckles[7].

Cultivation details
A very easily grown plant, it succeeds in most soils[1], though it prefers a well-drained humus-rich neutral to alkaline soil in full sun or light shade[37, 238]. A very hardy plant, tolerating temperatures down to at least -29°c[238]. The dandelion is a common weed of lawns and grassy places. Though it has a bitter flavour, the plant is often cultivated as a salad crop and as a medicinal plant, especially in parts of Europe. There are some named varieties with larger, more tender and less bitter leaves[183]. Dandelions can provide edible leaves all year round, especially if they are given a small amount of protection in the winter[K]. A valuable bee plant and an important food plant for the caterpillars of many butterfly and moth species[4, 24, 30, 54], it grows well in a spring meadow[24]. A deep rooting plant, it has roots up to 1 metre long and brings up nutrients from lower levels of the soil[201]. An excellent plant to grow in lawns, if the lawn is cut no more than fortnightly then the dandelions will provide a good quantity of edible leaves[K]. Grows well with alfalfa[18, 201]. Another report says that it inhibits the growth of nearby plants[54]. This is probably a reference to the fact that the plant gives off ethylene gas, this gas is a hormone that promotes the premature ripening of fruits and also induces the premature fruiting of plants, thereby stunting their growth[14, 18]. T. officinale is not a valid name for this species, but no valid name has as yet been ascribed to it[200]. This is actually an aggregate species of many hundreds of slightly differing species. Most seed production is apomictic which means that plants produce seed non-sexually and all seedlings are clones of the parent, thus small differences are maintained.

Propagation
Seed – sow spring in a cold frame and either surface-sow or only just cover the seed. Make sure the compost does not dry out. Germination should take place within 2 weeks, though 2 weeks cold stratification may improve germination. Prick out the seedlings into individual pots when they are large enough to handle, choosing relatively deep pots to accommodate the tap root. Plant them out in early summer. Division in early spring as the plant comes into growth.
